Paul Mottram joins The Greenway as Head Chef!!
The son of a construction engineer Paul travelled around the world following his father building hotels, bridges and universities living in Saudi Arabia, Sri Lanka and most islands in the Caribbean.
Having started a degree in civil engineering at south bank university, Paul turned his back on it to be a chef. Trained in his home county of Cornwall at Cambourne catering college he started his cooking career in the sleepy fishing village of Looe. From there he found himself at Lucknam Park Hotel working for Paul Collins and with Chris Stains.
Paul’s next move was a short lived stay at l’oranger, St James Street, London before being tempted to Chez Nico on Park Lane.
From there it was time for a break so went to sea travelling the world on the QE2 for 5 years and left as a chef de cuisine of the Princess Grill restaurant. On returning to the main land, He settled down in the Forest of Dean and Thornbury Castle where he spent 18 months as Sous Chef before being promoted to Head Chef. Paul achieved a consistently high two rosettes at Thornbury Castle before again being lured across the oceans to St Kitts in the West Indies on a short term contract.
Upon his return Paul was delighted to accept the position of Head Chef at The Greenway where he is looking forward to progressing and enhancing The Greenway’s long standing reputation for fine cuisine.
Paul’s current menus reflect the trend towards striking a balance between wholesome and flavorsome local ingredients skillfully prepared with flair and finesse. The set price three-course dinner menu at £45 boasts dishes such as mosaic of poached guinea fowl and ham hock for starters and a duo of Gloucestershire beef on veal jus or sous vide of Brixham brill. Desserts such as a rum baba with spiced pineapple and mace ice cream or lemon panna cotta with fresh honeycomb are simply stunning will leave a lasting impression!
Lunch menus are of a similar style but offer lighter options and two courses can be served in under an hour for those who have busier schedules to keep! (Two courses – £18 and Three Courses - £24). For those with smaller appetites the Lounge and Terrace menu offers a good selection of sandwiches and a selection of petit hot and cold dishes.
